Anise Slices (Biscotti)

2 1/2 cups flour

¼ tsp. salt

3 eggs

1 cup sugar

2 tsp. baking powder

1 stick butter, softened

1 Tbsp. Anise extract


Preheat oven to 350. Grease and flour 2 cookie sheets. Combine flour, salt and baking powder and set aside. Beat butter and sugar until very light and fluffy; add eggs one at a time, beating well after each addition. Beat in anise; add flour mixture and beat until well blended.

Divide mixture in half. Spread each half in a loaf on each cookie sheet. Bake 15 minutes or until golden brown. Remove from oven; cut into 1 inch thick slices. Turn each on its side and bake for an additional 10 to 15 minutes or until well toasted. This recipe doubles nicely.
